Whole Wheat Doughnuts (Zojirushi Home Bakery Virtuoso Plus Breadmaker, Ninja Combi and Flexbasket)



1 & 1/2 Cups Whole Milk (If using powdered milk, mix 1 & 1/2 cups water with 6 Tbs whole milk powder. They are fluffier when you use 1&1/2 cups, than when using just 1&1/4 cups.)
1 Large Egg, beaten
3 Cups Whole Wheat Flour, finely ground
1/2 cup Vital Wheat Gluten
3.5 Tbs Sugar substitute or sugar
1 tsp Salt
4 Tbs softened Butter
1 tsp Rapid rise or Bread Machine yeast
Optional: Sprayable extra light olive oil


Toppings of choice


  1. Add the dough ingredients to the bake pan in the exact order listed above.
    1. After adding the flour, the other ingredients go on the two far side walls.
    2. Ensure the vital wheat gluten is added in around all the edges of the bake pan.
    3. Make a small shallow well in the middle of the flour and add the yeast in it.
  2. Use the 2-pound dough settings for your bread machine.
  3. Press Start
  4. Once the dough is finished, cover it with paper towels and allow it to rest for 20 minutes.
  5. Roll the dough flat with a rolling pin.
  6. Then use a biscuit cutter, to cut out about 10-12 doughnuts. You can either cut the holes out separately, or break the middles by hand for holes. If you break the middles by hand, the doughnut holes will be much smaller after cooking.
    • You can also roll pieces into rope shapes, fold them in half and twist them. For rope shaped doughnuts.
  7. Put parchment paper over the air fry rack in the pan/basket of the cooker.
  8. Place the pieces of dough on the parchment paper.
  9. Spray the dough with water.
  10. Set the cooker to Proof 95° F., 30 minutes.
  11. Optional after proofing: You can spray the dough with oil. This makes the exterior crispy, so don’t do this if you don’t want the exterior to be crispy.
  12. After proofing, set the cooker to Bake 350° F., 15 minutes. (If the cooker has a preheat function, remove the dough and add after the preheat.)
  13. Allow the cook time to complete.
  14. Add your toppings of choice.
  15. Enjoy!
