Whole Wheat Bagels (Zojirushi Home Bakery Virtuoso Plus Breadmaker and Gourmia French Door XL Digital Air Fryer Oven)

Ingredients:

Dough:

2 Cups Water
3 & 1/4 Cups Whole Wheat Flour, finely ground
1/2 cup Vital Wheat Gluten
2 Tbs Sugar substitute or sugar, or 3/4 tsp organic monk fruit extract powder
1 tsp Salt
1 tsp Rapid rise or Bread Machine yeast

Kettling:

1 Gallon Boiling Water
1 Tbs Raw Honey

Instructions:

  1. Add the dough ingredients to the bake pan in the exact order listed above.
    1. After adding the flour, the other ingredients go on the two far side walls.
    2. Ensure the vital wheat gluten is added in around all the edges of the bake pan.
    3. Make a small shallow well in the middle of the flour and add the yeast in it.
  2. Use the 2-pound dough settings for your bread machine.
  3. Press Start
  4. Once the dough is finished, cut it into about 10 pieces, rolled into balls.
  5. Cover the dough with paper towels, and let it rest about 20 minutes.
  6. Stick your finger in the middle of each piece of dough, and form the dough into doughnut shapes.
  7. Cut out 10 pieces of parchment paper into 5 inch squares.
  8. Put parchment paper over the air fry rack in the pan/basket of the cooker.
  9. Place the pieces of dough on the parchment paper.
  10. Spray the dough with water.
  11. Set the cooker to Proof 95° F., 20 minutes.
  12. On a cooktop, start boiling the kettling water. Add the honey. Then lower the heat, so the water is showing bubbles rising slowly, about 200-260° F.
  13. Add the dough to the water with the parchment paper, about 3 at a time.
  14. Boil for 30 seconds on each side. The parchment paper will fall off in the water.
  15. Get the dough out of the water, let excess water drain off.
  16. Put a layer of parchment paper over the air fry rack in the pan/basket of the cooker.
  17. Put the dough on the parchment paper.
  18. Set the cooker to Bake 375° F., 15-20 minutes. (If the cooker has a preheat function, remove the dough and add after the preheat.)
  19. Allow the cook time to complete.
  20. Enjoy!
