Whole Turkey Roast (Ninja French Door Premier Air Fryer, Convection Oven, Toaster Recipe)

Ingredients:

12 pound whole turkey, fresh/thawed
1 ounce butter
1/4 cup extra light olive oil
Smoked sea salt
Freshly cracked black pepper

Brine of choice

Instructions:

  1. If frozen, thaw the frozen turkey in the refrigerator.  This may take about 5 days.
  2. Unwrap the turkey, leave the leg ties in place, but remove any innards from the inner breast cavity and the rear. You may place them in the trash, unless you need them for another dish.  And pat the turkey dry with clean paper towels.
  3. Brine the Turkey for 11-12 hours, in a zip sealed brining bag, that is in a roasting pan, that you leave in the refrigerator while brining.
    If you don’t have a zip sealed bag, you may have to put the turkey into a clean food safe bucket, and put that into the refrigerator.  You can also use a large cooler with some ice.
  4. Take the turkey from the brine and pat the exterior dry with clean paper towels.
  5. You will likely need to spatchcock the turkey to fit it into the oven.
    • Use food shears to cut the backbone out of the turkey.
    • Open and lay the turkey insides down.
    • Press on the breast area, to break down the breast bone.
  6. Heat the oil and butter in a saucepan on a cooktop at very low heat (100° F.), to mix them together.
  7. Coat the top of the turkey with the mixture of butter and oil.
  8. Season the turkey.
  9. Place the turkey into the bake pan.
  10. Set the cooker to Whole Roast, 360° F., 1 hour, 10 minutes cooking time.
  11. Press Start, to begin preheating.
    • Since this cooker has a 90 second preheat, I just put it in before starting.
  12. Allow the time to complete.
  13. Check the meat temperature in the breast is at least 165° F. Check multiple areas in the breast to be certain.
  14. Let the turkey rest for at least 5 minutes, to reabsorb juices.
  15. Enjoy!
