Whole Turkey (NuWave Primo Grill Oven Recipe)

Ingredients:

1 whole 21 pound turkey, thawed.
Brine of choice
2 Tbs butter
1/4 cup canola oil
Poultry seasoning of choice
Applewood smoked sea salt
Fresh ground black pepper

Instructions:

  1. Thaw the frozen turkey in the refrigerator.  This may take about 5 days.
  2. Unwrap the turkey, leave the leg ties in place, but remove any innards from the inner breast cavity and the rear. You may place them in the trash, unless you need them for another dish.  And pat the turkey dry with clean paper towels.
  3. Brine the Turkey for 21 hours, in a zip sealing brining bag, that is in a roasting pan, that you leave in the refrigerator while brining.
    If you don’t have a zip sealing bag, you may have to put the brining bag in to a bucket and put that into the refrigerator.  You can also use a large cooler with some ice.
  4. Take the turkey from the brine and pat the exterior dry with clean paper towels.
  5. Tie the wings to the body.  So all limbs are tied in.  If the legs did not come with a tie, tie the legs together.  Any tie made of turkey skin will come apart during cooking, so that will not work.
  6. Heat and mix the canola oil and 2 Tbs of butter.
  7. Rub the full exterior of the turkey with the entire canola oil and butter mixture.
  8. Cover in spices of choice.
  9. Place the NuWave Primo turkey holder onto the grill plate in the NuWave Primo.
  10. Setup the NuWave Primo with enough extender rings to hold the turkey fully.
  11. Insert the meat probe into the NuWave Primo jack for it.
  12. Set the NuWave Primo cook to 325° F.
  13. Press the Probe button and set the desired meat temperature to 165° F.
  14. Press the Preheat button.
  15. Press the Start/Pause button, to start the preheat.
  16. After the preheat is complete, place the turkey onto the turkey holder.
  17. Cover with the NuWave Primo Power Dome and Power Head.
  18. Press the Start/Pause button, to start the cook.
  19. Allow the cook to complete.
  20. Check the meat temperature in the thigh is also at least 165° F.
    1. If the thigh is not 165° F. , continue to cook at 30 or 15 minute intervals until the thigh is 165° F.

      (Total cook time for a 21 pound turkey may take about 2.5 hours.)
  21. Remove the turkey from the NuWave Primo, and allow the turkey to sit wrapped in foil for about 30 minutes. This will help make the turkey very moist, it will continue to roast in the foil.  This step is not required, but a good idea to do.
  22. Enjoy!

Note: Food safety guidelines mention, turkey meat should be removed from the bones within 2 hours after cooking your turkey.  Legs and wings can be kept whole.
