2 pound pork loin (thawed)
16 oz bag of stew vegetables (frozen is OK)
Mrs. Dash original, as desired
4 ounce Sweet and Sour sauce
1/4 cup water
1. Sprinkle with Mrs. Dash and rub on top and bottom.
2. Poke the pork all over with a fork. Rub about 3 ounces of Sweet and Sour sauce all over, with a light glaze all over.
3. Spray cake pan with non stick cooking spray and place on the lower rack. Pour vegetables in. Pour water over vegetables. Place the pork on top of the vegetables.
4. Cook at 350°F for 20 minutes. Add the rest of the Sweet and Sour sauce generously over top of the pork. Continue to cook 25 minutes. Add more water as needed, if things look too dry during cooking. Pork is done when its internal temperature reads 170°F.
Serves about 5 depending on portion sizes.
