Light Sourdough Starter Ingredients:
360 ml water (1.5 cups – 2 cups water)
2 cups whole wheat flour
2 teaspoons of diastatic barley malt powder
2 teaspoons rapid rise yeast
Bread Ingredients:
2.5 tablespoons apple cider vinegar
1.5 tablespoons lemon juice
3 cups spelt flour
(Optional) 1 tablespoon chia
3/4 teaspoon organic monk fruit extract powder (or 2 tablespoons of a granulated sweetener)
1.5 teaspoons salt
2 teaspoons rapid rise yeast
Instructions:
- Put the paddles into the bake pan of the bread maker. Make sure both paddles are facing the same direction. This helps ensure an even loaf.
- Add the “Light Sourdough Starter Ingredients” into the bake pan, each in order. Put the barley malt powder on the sides. Put the yeast in a small “well” in the middle of the flour.
- Select function #12 for sourdough starter.
- Press start and allow it to make the sourdough starter. This takes 2 hours 10 minutes.
- Immediately when the sourdough starter is finished. Add the “Bread Ingredients” into the bake pan, each in order. Except for the flour and yeast, add the ingredients to the sides. Add the yeast to a small “well” in the middle of the flour.
- Select option 1 with a medium loaf.
- Press Start, this will take 3 hours 15 minutes to complete.
- Take the bread out and let it cool for about an hour. This will make it easier to slice.
- Slice the bread with a bread slicer, for more even slices.
