Ingredients:
One 8 – 9 Pound, or Two 7 Pound Pork Shoulder Butt Roast(s)
Yellow Mustard
Pork Seasoning of choice
1 or 2 Cups of Apple Juice
1/2 or 1 full Cup of Apple Cider Vinegar
Instructions:
- Place a light coat of mustard all over the pork shoulder butt. This will help hold the seasoning.
- Cover the pork shoulder butt with your pork seasoning of choice.
- Per pork shoulder butt roast, mix 1/2 cup of apple juice and 1/2 cup apple cider vinegar. (If doing 2, you need a total mixture of 1 cup apple juice + 1 cup apple cider vinegar.)
- Inject the mixture of apple juice and apple cider vinegar into all parts of the pork.
- Let the pork rest about 30 minutes at room temperature.
- Place the pork shoulder butt roast onto the Grill Plate of the NuWave Primo Grill Oven.
- Place the Extender Ring for the NuWave Primo Grill Oven into place.
- Put the meat probe into the probe jack and deep into a thick part of the meat.
- Put on the NuWave Primo Power Dome and Power Head.
- Set the cook to 220° F., 50% Top/50% Bottom.
- Press the Probe Button and set the probe temperature to 165° F.
- Press the Start/Pause button, to begin the cook.
- At 165° F., the cook will stop, remove the meat probe, wrap each pork shoulder butt roast in butcher paper or foil, and add 1/2 cup apple juice to each before closing the butcher paper/foil. (Total of 1 cup if doing 2.)
It may take about 3 hours to reach 165° F. - Put the meat probe back into a pork through the paper/foil.
- Put back on the Extender Ring and NuWave Primo Power Dome and Power Head.
- Set the cook to 220° F., 50% Top/50% Bottom.
- Press the Probe Button and set the probe temperature to 200° F.
- Press the Start/Pause button, to begin the cook.
- After 9 total hours of cooking, stop the cook, so you can up the cooking temperature.
- Set the cook to 245° F., 50% Top/50% Bottom.
- Press the Probe Button and set the probe temperature to 200° F.
- Press the Start/Pause button, to begin the cook.
- Allow the cook to complete, or stop it anytime after the meat temperature is above 190° F. It may go 12+ hours, so after 12 hours if the meat temperature is above 190° F. you may stop the cook.
