Chocolate Bars from Cacao Beans

Ingredients:

1 pound of organic cacao beans (Usually about 3-4 cups.)
About 9 tablespoons of cacao butter, or more if desired
4 tablespoons of raw honey
1 teaspoons of baking soda (reduces acidity)
1 teaspoons of organic monk fruit extract powder. (Equivalent to about 3 tablespoons of sugar.)

Instructions:

  1. Roast the beans with skin on them, in an air fryer oven at 325° F., for 1 hour.
  2. Remove the beans and allow them to cool.
  3. Remove the skins from the cacao beans. Some may come off easily by hand. Others, you may need to use a butter knife, to help the skin come off. Cacao bean skins are high in lead, so it is best to remove them.
  4. Using a food chopper, chop the beans until they turn into a fine paste.
  5. Melt the cacao butter in a small pot on a cooktop, at 100° F.
  6. Add the granulated/powdered sweetener and baking soda.
  7. Mix those ingredients a little with the food chopper.
  8. Pour the melted cacao butter into the food chopper.
  9. Add the honey.
  10. Chop things well until the mixture is smooth.
  11. Pour the mixture into about 6 large chocolate bar molds.
  12. Place the molds into the refrigerator for at least 1 hour.
  13. Enjoy!
