Slow and Low Ribs:
Ingredients:
2 Racks of Baby Back Ribs, about 3 pounds each
Yellow Mustard
Rub of Choice
2 Cups of Apple Juice
Instructions:
- Remove any major top side fat or silver skin, cut it off with a filet knife.
- Remove the membrane from the back, by getting a knife under the fat layer and pulling it off. Use a paper towel to improve your grip when pulling it off.
- Cut the ribs into quarters.
- Cover ribs with a light coat of yellow mustard.
- Cover with Rub of choice.
- Arrange one rack of ribs on the Grill Plate
- Put the Raised Rack for the NuWave Primo Grill Oven in over the first rack of ribs.
- Place the 2nd rack of ribs in on the raised rack.
- Cover with the NuWave Primo Power Dome and Power Head.
- Set the Cook to 200° F., 50% Top/50% Bottom, 6 hours cooking time.
- Press the Start/Pause button.
- Allow the ribs to cook for 3 hours.
- Pause the cook, wrap the ribs in foil or butcher paper with a 1/4 cup of apple juice poured over over each piece before closing the foil or butcher paper.
- Continue the cook for 2 more hours.
- Pause the cook and remove the foil or butcher paper.
- Raise the cooking temperature to 250° F., and allow the last hour of cooking time to complete.
- Check the meat temperature is at least 190° F. and meat is pulling back from the bone.
- Enjoy!
Hot and Fast Ribs:
Ingredients:
1 Racks of Baby Back Ribs, about 3 pounds

- Remove the membrane from the back, by getting a knife under the fat layer and pulling it off. Use a paper towel to improve your grip when pulling it off.
- Cut the ribs into quarters.
- Cover ribs with a light coat of yellow mustard.
- Cover with Rub of choice.
- Arrange the ribs on the Grill Plate.
- Insert the Meat Probe into the probe jack and a thick piece of meat.
- Cover with the NuWave Primo Power Dome and Power Head.
- Set the Cook to 350° F., 50% Top/50% Bottom.
- Press the Probe button and set the temperature to 190° F. .
- Press the Start/Pause button.
- Allow the cook to complete.
- Enjoy!
