Ingredients:
2 cups almond flour
3/4 cup dark chocolate chips, 85% cacao
2 tablespoon granulated sweetener (or 3/4 teaspoon of organic monk fruit extract powder)
1 tsp baking powder
1/2 teaspoon sea salt
2 large eggs, beaten
2 tablespoon organic dark maple syrup
1/4 cup melted unsalted butter
1 teaspoon vanilla extract
sprayable extra light olive oil
Instructions:
- Mix the wet ingredients in a medium sized bowl.
- Mix the dry ingredients in a large bowl.
- Use the griddle plate in the cooker.
- Set the griddle to 300° F., 30 minutes cooking time.
- Press Start, to being the preheat.
- While preheating, add the mixture of wet ingredients to the bowl of dry ingredients and stir well.
- After the preheat, spray a light coating of oil on the griddle plate.
- Use a spoon to scoop out 12 cookies on the griddle plate. You will need to form them into cookie shape a bit, since they won’t spread out much during cooking.
- Use the back of a spatula, to flatten the cookies down some. They need to be thin to cook fully.
- Close the lid and let them cook for the cook time.
- After the cook time is complete, remove them from the griddle.
- Enjoy!
